The global demand for protein is rising as populations are growing and people are more aware of the health and weight management benefits of proteins. But it’s a challenge to provide for this need as producing meat is an inefficient process as animals need land, water, food and time to grow.
The DSM Maxipro® portfolio aims to help the food industry to do more with protein in different food products. The Maxipro® portfolio incorporates a wide range of proteases, including Maxipro® HSP, that help improve protein solubility, functionality and digestibility as well as improve the taste profile of protein and even reduce allergic reactions to certain proteins. In this way, DSM meets the growing demand for high-value protein and also make the best use of resources that are otherwise wasted, without the need for additional ingredients. The resulting proteins are functional, colorless, odorless, and neutral in taste (i.e. they lack the often bitter taste of extensively hydrolyzed proteins).
