Maxiren®: innovative cheese coagulant
Retains texture throughout shelf life, lowers proteolysis and improves processing flexibility
Maxiren® XDS is DSM’s latest innovation in cheese coagulants, helping to retain the texture of cheese over shelf-life with lower proteolysis. This gives flexibility in processing the cheese into for instance string cheese.
Additionally it improves the stretching of the cheese and results in evenly browned cheese on pizza that meets consumer requirements 100%. The coagulant was developed taking key needs of cheese producers into consideration such as plant efficiency and whey quality management.
