Foodcase

The food innovation and development company for the inflight catering industry.

Foodcase has developed innovative methods to create ready-to-eat meals and snacks for the airline industry with an extended shelf life at room temperature. This has been achieved by a smart combination of  food preservation technology, packaging knowledge and  culinary excellence. Moreover, there is a lot of knowledge about food ingredient behaviour. Depending on the product, they can be kept at ambient temperatures (5-25°C) between 2 and 6 months. Standard airline meals can also be kept 6 months but need to be frozen.

In order to deliver our innovation projects well, Foodcase works with a multi-disciplinary innovation team that consists of internal and external experts, including knowledge institutes such as Wageningen University and Research Centre.

A good product quality is essential in order to be successful. There has been a study to investigate the quality of the Foodcase products. This was a Topsector Agri & Foodproject in which Foodcase, Wageningen UR and 2 other companies collaborated together in a public private consortium (PPS).  It was investigated how consumers value the quality of shelf stable (non-chilled) meals compared to frozen meals. The study showed that the tested shelf stable meal, an English Breakfast, was equally liked to the frozen English Breakfast meal. This implies that the Foodcase non-chilled English breakfast meal has the potential to be an adequate replacer for the currently on-board served frozen English breakfast meal with the advantage of significantly less food wastage.
