PhageGuard S™: Natural Phage Product Against Salmonella
A product that eliminates Salmonella without affecting taste, texture or other organoleptic properties of treated food products.
The company Micreos has found that nature offers its own best solutions, as exemplified by the ability of phages to eliminate pathogenic bacteria. PhageGuard S™ consists of a watery solution containing two Salmonella-specific bacteriophages, Fo1a and S16, which are produced and purified separately, and mixed in equal concentrations. These phages utilize different receptor molecules, providing two modes of action that have been shown to knock out several different species of Salmonella. FDA & USDA have approved PhageGuard S as a ‘GRAS’ (Generally Recognized as Safe) food processing aid against Salmonella in poultry, pork and beef.
PhageGuard S eliminates Salmonella, rather than merely inhibiting its growth. PhageGuard S does not dissipate in the presence of protein. It enables processors to reduce the use of chemicals and reach Salmonella in places where antimicrobial chemicals are ineffective, for example in follicles which close when exposed to cold water in a chiller. It can be easily sprayed topically or added to chill tank water. The product does not affect taste, texture or other organoleptic properties of treated food products. Phages do not leave an ecological footprint.
