Nutri-Pulse® e-Cooker: sustainable food preparation
Pulsed Electric Field (PEF) technology for fast, low temperature preparation, preserving vital ingredients.
IXL Netherlands developed the Nutri-Pulse® e-Cooker which uses Pulsed Electric Field (PEF) technology to cook food in a sustainable way. Food can be prepared in an exceedingly short time (within minutes) and at low temperature, with minimal effect on proteins, vitamins, antioxidants, sugars and other (healthy) substances. Hence, there is better conservation of the original nutritive value and more flavor, color and taste. Foods like fish, meat, vegetables and fruit can be prepared easily with pulsed electric fields.
The PEF technology used in the Nutri-Pulse® e-Cooker changes the structure of food that is treated by the pulses; cell walls become permeable and are disrupted. The food becomes eatable, chewable and digestible. The preferred temperature is reached by pulsed ohmic heating. With this technology long-term cooking at 100°C is no longer necessary. This appliance is innovative, has a low energy consumption and there is less waste of food components, uniform heating and safety in use.
The Nutri-Pulse® e-Cooker and the new cooking process (e-Cooking®) have been developed together with Wageningen UR Food & Biobased Research and has won several prestigious awards.
