TWIN RotaTherm® Continous Cooking System

Challenge

In 1988, experienced dairy technologist and processed cheese factory manager, Robert ‘Bob’ Smith, was frustrated that the cooking systems available to food manufacturers had design, mechanical and operational limitations. He wanted to create a cooking system that would increase productivity, and, most importantly, produce a consistent product every time. In his family’s garage in Melbourne, he designed and built the first RotaTherm® and Gold Peg International was established.

Solution

The RotaTherm® cooks and processes a wide range of food products such as baby food, soups, processed cheese, desserts and pet food. Featuring direct steam injection technology, the heating and processing parameters can be precisely controlled, allowing for an optimal end product. Over the years the team at Gold Peg International have taken a collaborative approach to innovation with an unwavering focus on superior food production outcomes. Utilizing the original RotaTherm® technology, they have expanded the range, which now includes the TWIN RotaTherm®, released in 2014. This system extends non-stop production time from 72 to 156 hours and a second cooking column alternates producing product while the offline column is cleaning. There are 11 TWIN systems installed and in operation.

Outcome

The RotaTherm® continues to be the world’s most sophisticated and technologically advanced direct steam injection continuous cooker. Multinational food manufacturers credit their success to this system, with its efficiency, ability to enhance the integrity of the ingredients and product consistency. The addition of the TWIN RotaTherm® to the range allows for further increases in productivity due to longer run times and a second cooker. One international client uses a single system to process 300 different products. Gold Peg International has used the RotaTherm®’s technology to develop another world-first cooking system, the GPiCS, designed specifically for Mozzarella and Pasta Filata varieties.
