Research in the European Bakery Innovation Centre (EBIC) proved the technological feasibility of increasing the protein level in bakery products to 10 g per portion, which is 3 to 4 times the amount in regular bakery products. The amino acid profile is balanced on the "gold standard" of the chicken egg, and based on vegetable proteins and whey proteins. Thanks to its advances, Carezzo can make the nutritional claim "source of protein" about its bakery products.
Clinical studies indicate that patients in hospitals often do not reach the required protein intake per day, based on the current practice of diets and medical drinks. To facilitate higher protein intake, protein enriched products should be included in the regular menu on mealtime and in between moments.
