Gold Peg identified a need for an efficient environmentally friendly cooker stretcher for sensitive products like mozzarella and pasta filata. In 2010, the GPiCS direct steam injection continuous natural Mozzarella cooker stretcher was launched.

The old way to produce Natural Mozzarella needed a big volume of water. By using proven direct steam injection technology in a fully enclosed system many problems were solved and opportunities opened up.

The GPiCS doesn’t use bath water so there is no cook water reprocessing, and it is all enclosed so safe from foreign matter. These two also allow for ingredients to be added - opening a whole world of opportunities for food manufacturers to develop new varieties using the one system. Flavours, colours, particles are now possibilities to satiate the demand of customer s for variety as well as being more environment friendly.

With the GPiCS system, you’re offered the flexibility to add ingredients directly to the curd stream during cooking. From here, any additional ingredients are mixed into the existing curd flow during the cooking and stretching processes. The totally sealed system ensures no foreign matter is introduced to the stream. It is also fully enclosed hygienic system with a fast an full CIP system (Clean-In-Place), so the product is not exposed to the environment once it has been fed into the machine, which is different of the traditional open systems.

The GPICS flexibility and conception is perfectly adapted to sensitives cheeses like Mozzarella, string cheese and pasta filata formulas.
