It all started with a passion for Zaatar and the desire to produce high-quality dried thyme. Being a wild herb, Lebanese thyme needs nothing more than naturally fertile soil, sunlight and clean water to thrive. But the agriculture startup The Good Thymes wanted to introduce new and top-grade thyme mixes into the market, elevating a national staple to gourmet heights.

With the help of the best chefs and specialists in Beirut, The Good Thymes set out to create the finest dried herbs mixes, seasoning spices and other Zaatar-based products. In order to guarantee an all-natural grade “A” product, free of artificial colors or flavors, and without any additives or preservatives, The Good Thymes organically grows their own zaatar, sorting and blending it with other local endemic wild herbs, nuts and spices, for later sale in specialty shops around the country, their online store, and at various food festivals and fairs.

Just two years after launching, this top-notch quality artisanal product is valued for its unique positioning strategy and its careful unindustrialized production.
